Growing up with one grandmother from italy and the other a colonels wife from Paris TX, good cooking has been forever in my life. Julia, my paternal grandmother, taught me the simplicity of great ingredients and a little creative technique, while my maternal grandmother, casually know as Stuff, taught me about the labor of creating soul satisfying, eye closing comfort food.
I have taken my life lesson from both of them and created my own brand of ketocentric food that not only satisfies the stomach, but also the soul. After cooking around the globe for the past 25 years, I have a Tony Bourdain-like resume of flavors I have tasted, ingredients rarely seen and techniques so advanced from the most rustic cultures. I have also embraced molecular gastronomy and 21st centur techniques. I am a student of my craft and am an avid food historian. I have galvanized this into a unique style of cuisine that tis not only delicious, but nutritious.
